Dr. Pepper Cupcakes
Let’s talk about caffeine infused chocolate cupcakes. They are not as good as strawberry champagne cupcakes, but close enough. A lot of soda pop cupcakes are dry, so with a little experimentation in the kitchen, I've come up with a great Dr. Pepper cupcake.
1 Box of Moist Cake Mix – I used chocolate, but I’m sure you could use Vanilla
3 1/2 Eggs
1 1/2 cups of Dr. Pepper
Mix, Pour and Cook 12 minutes at 375 degrees.
For the Frosting
I like cherry Dr. Pepper, so I made my frosting cherry flavored, if you are not a cherry fan, omit the cherry juice.
1/4 Cup of Melted Butter
4 Cups of Powdered Sugar
3 Tbsp of Dr. Pepper
1 Tsp of Vanilla
2 Tsp of Maraschino cherry juice
Mix well with a whisk
When your cupcakes come out of the oven poke holes with a toothpick and drizzle some of the frosting over them. Once the cupcakes cool a bit, but are still warm put another dollop of frosting and spread it evenly. Dig a little area at the top out to place a cherry!
To make these cupcakes even more special, carefully cut out the bottom of the can and fold the edges in. Cut out the logo of the Dr. Pepper and tape it over the UPC code, put a half of a straw in and serve!
